A white blend of Weißburgunder (Pinot Blanc), Grüner Veltliner and Welschriesling. Cultivated on chalky and sandy soil in Stixneusiedl. The grapes are hand picked in early October. After 48 hours of maceration, the grape must is fermented in stainless steel tanks. The wine is then stored for 6 months in stainless steel tanks before being bottled.

White wine from Spitzerberg. The soil consists of limestone and the vines grow along the slopes of Spitzerberg. The first plants of Grüner Veltliner were planted in 1970. The grapes are harvested by hand and pressed. Then they spontaneously get fermented in amphorae. 60-90 days maceration. Vinification takes place for 6 months in 50% used oak barrels and 50% in amphorae. When this is done, it is bottled at the end of August one year after the harvest.

The wine is made from a mixture of two terroir. The first, known as "Sur La Roche", consists mainly of a surface layer of limestone, with underlying clay slate. This gives the wine a very good balance between sugar and acidity. The second area is called "En Billie Folland" and has a terrestrial moon consisting of clay composed during the Triassic period (geological period lasting 51 million years) with much less limestone impact, thus contributing to a smoother and fuller width of the wine .

Pouilly Fuissé

Vieilles Vignes is a mixture of three different terroir with the same profile. All vines are well established, with an age of at least 40 years. These different plots belong to all Vergisson terroir. This means that they tend to have limestones and produce wines with good balance, thanks to the fact that they are grown at a higher altitude than is usual for Pouilly-Fuissé. The grapes are hand picked at the end of September. The fermentation lasts for 30/35 days and the grape juice is macerated over the grape skins. The temperature of the fermentation in this phase fluctuates between 15 ° C to 22 ° C. After manual harvesting, the juice is carefully extracted with a pneumatic press. Vinification is carried out in oak barrels that have been used for up to five years, of which 15% is new oak. The wine is stored for up to 10- 12 months so that it can slowly develop to its full potential.

Taste: Tropical fruits, apple, brioche and almond.

La Maréchaude is located in the middle of the slopes, directly to the south. The earth is quite deep and consists of a collection of slates from the Pliensbachian age. Its high proportion of clay means that it produces wines with high aromatic density, while the limestone provides harmony and minerality. The must is carefully extracted with a pneumatic press. The wine is then allowed to settle for 20 to 24 hours. Vinification is carried out in oak barrels that have been used for up to five years, of which 15% is new oak.

This wine is a blend of two grapes, Verdejo and Sauvignon Blanc. The Verdejo grape originally comes from northern Africa, but spread to Spain during the 13th century. At first the grape was used to produce strong Sherry-like wines, but in the 1970s, they began to produce healthy and soft wines. The grapes are harvested during the night in September when the temperature is around + 8 ° C, because the Verdejo grape easily oxidizes.

The wine has powerful tropical fruit aromas with hints of grass. Expressive with long round texture on the palate, fresh and a balance of good acidity and a pleasant bitter finish.

At Bodega Pago de Tharsys they treat soil and vines in accordance with the organic farming standard. They do not use herbicides, chemical pesticides or synthetic fats. They use natural resources and organic fertilizers to respect balance in nature and to help to enrich the biological diversity of the vineyard. The harvest is done manually in 20 kg boxes that arrive at the wine cellar within 15 minutes. The best grapes are selected manually before they are pressed.

This wine is made in French oak barrels (50% new, 50% 1 year old), where it is allowed to rest for 2 months. Battonage is performed daily during that period. The wine is then transferred to stainless steel tanks where it remains in contact with the yeast for another 6 months until bottled at the end of May.

This organic wine is produced from the Albariño grapes, which grow on an area of ​​1 hectare, and is located south of the Pago de Tharsys vineyard. The soil consists of high silica soil, which is formed by sediment and other aquatic microorganisms with siliceous skeletons 30 million years ago.

This place is historically known by the name of Albar (Albus in Latin meaning white) because of its whitish chalky soil. The soil is ideal for the Albariño grape variety as it provides a little nourishment but deeper it builds up moisture which helps it get through the drier months of the year and produces small, very tasty grapes.
