Hand picked and sorted manually. 80% are pressed by machine, 20% are stamped by foot with the stems. 6-8 days maceration. The grape must then ripen in 500 liter barrels, stainless steel tanks and amphorae. No cultured yeasts, bacteria or additives are used. Everything is completely natural.
