The Vineyard of ” Monte Faustino” is the first family vineyard. It is situated in Monte Faustino a small area in the municipal district of San Pietro in Cariano with an altitude of 250 m. The grandfather Giuseppe Fornaser had been cultivating this area since the 1920s. It is the pride of the business because of the extraordinary longevity of the terrain, which was planted with vines by the grandfather of the Fornasers. 

Here the family tradition is reflected in the age-long interaction between plant and soil: the result is the particular fine flavour of graphite that characterizes its grapes. The porous yellowish limestone soil offers the plant some peculiar mineral nuances, which the oenologist appreciates, ascribing a unmistakable typical-ness to the wine. The porousness of this limestone soil maintains the ideal measure of water in order to permit the cultivation of the vine, which reaches and transmits the mineral essence of the land to the grapes. The old vineyard, with a bigger structure of the roots, better absorbs the water and the minerals, giving the grapes a quality that is inaccessible for a younger plant. 

The Vineyard of Traversegna is situated next to the vineyard of Monte Faustino and it is bordered by the three municipal districts of Sant’Ambrogio, Fumane and San Pietro in Cariano. Right at the border of these districts a tree grows. As a tribute to this tree the wine serie il Roverone was created. It is composed of many terracings of yellow and calcareous soil with full exposure to sunlight during the whole day. The Vineyard of Traversagna combines the modern oenological art with the exceptional productive properties of the “Mother Vineyard” with a good climatic hillside position. 

Thanks to the land transformation, the rainwater is contained in the terraced land and it permits grapes to receive all the mineral and organoleptic peculiarities, which represent the heritage of a long-standing wine-growing zone. The heat of the sun, which is absorbed by the stones that compose the endless terracings, is released during the night, further improving the quality of the produced grapes. 

Vineyard of Costalunga is the latest purchase of the family Fornaser. It is bordered by the extreme part of Valpolicella, in the municipal district of Sant’Ambrogio with an ideal altitude of 350 m. Costalunga is composed of terracing’s with a full exposure to sunlight from east to west because of the remarkable expansion, as its name suggests. (“Costalunga” means “Long coast”, that is to say a long and wide territory with a particularly fortunate position and exposure to sunlight). The vineyard offers new qualitative nuances to the production of the Fornasers thanks to a conjunction of very successful events. 

The red land, which is clayey and rich in skeleton gravel, (little pebbles), and a great microclimate, which becomes milder thanks to the reverberation of Lake Garda, in conjunction with the mountains of Lessina, and the winds from the river basin of the Adige river, together they nourish the plants, protecting them from illnesses and giving the wine evocative flavours, which are typical of this specific terrain and is characterised by its indisputable prestige. Thanks to the drainage and to the terracing with dry-stone walls that were built by the family Fornaser, the Vineyard of Costalunga represents the realisation of the most important calling of a territory, which is situated in an invaluable zone for the wine production.

The best grapes are hand-selected in the end of September. The grapes are naturally desiccated in wooden crates until the end of February. Separation of the grapes from the grape-stalks and soft wine-pressing. The fermentation, which lasts about 30/35 days, is permitted thanks to daily wine-pressing and pumpings of the must over the grape skins. The temperatures of fermentation and maceration vary between 15°C to 22°C. 

Colour: Intense ruby red.
Scent: Ripe red fruit, plum, cherry, marasca with spiced fragrances.
Taste: Ripe red fruit with hints of cinnamon, chocolate and vanilla.
Grapes: 70% Corvina, 20% Rondinella and 10% Sangiovese
Refinement: 48 month on small oak barrels, 12 month in the bottle.
Total acidity: 5,90 g/l

The fermentation, which lasts about 30 days, is permitted thanks to daily wine-pressing and pumpings of the must over the grape skins. The temperature of the fermentation in this phase vary, from 15°C to 22°C.

Taste: Elegant with essences of marasca, vanilla, coffee and chocolate.

This wine is obtained from light strain of grapes, which are cultivated in the vineyard "La Traversagna" that is in the heart of Valpolicella Classico zone. It is the result of the detailed selection of the grapes and of a carful refermentation over the skins of Amarone.

Colour: Full and intense ruby-red.
Scent: Elegant scent of ripe red fruit, cherry and marasca.
Taste: Harmonic velvety structure of red fruit and spiced scents.
Grapes: 70% Corvina, 25% Rondinella and 5% Croatina.

The grape are hand-harvested into wooden crates during the month of October. Separation of the grapes from the grape-stalks and soft wine-pressing. The alcoholic fermentation, which lasts about 8/10 days, is permitted thanks to daily wine- pressing and pumping of the must over grapes dregs. The temperature of the fermentation in this phase vary from 22°C to 25°C.

Colour: Brilliant ruby-red.
Scent: Has a delicate and floral scent, it reminds us of violets and roses.
Taste: Fresh, dry and balanced with essences of cherry and almond.

The carefully selected grapes are picked by hand in February March.
Then the grape juice is pressed gently. After 2 days, the grape juice is separated from the shell residues. The fermentation is ongoing for 20 days, with temperatures between 8° C and 15° C.

Colour: Golden yellow
Scent: Has a intense scent with fragrances of honey, dried fruit, dates, dried figs,bananas and apricots.
Taste: Is a perfect balance of sweetness, very persistent and long-lasting and it clearly reminds us of vanilla, of acacia’s honey, wild flowers as it also recalls our olfactory sensations.
Grape: Garganega and Malvasia
Refinement: 30 month in french oak barrels and 6 month in the bottle.

The grapes are harvested by hand in February/March.
They only use the grapes that sit at the "ears" of the bunch.
The maceration and fermentation of the grape juice is ongoing
for 20 days, with a temperature between 12 ° C and 15 ° C.

Colour: Full ruby-red.
Scent: Has a intense scent of grapes and dryed red fruit, which is followed by floral sensations of violet, iris and wild rose.
Taste: It is warm, velvety, sweet and it envelops the palate reminding us of raisins marasca and almonds.
Grape: 70% Corvina, 20% Rondinella and 10% Sangiovese
Refinement: 24 month in french oak barrels and 12 month in the bottle.
